    Guardians of a Monumental Heritage

    San Virgilio is not just a farm; it is an act of love for the land of Puglia. It all began with the vision of a man, born in 1945, who after many lives chose to return to his roots, guided by the call of the olive trees and the Adriatic breeze blowing just one kilometer and a half away.

    We are in Fasano, immersed in five hectares of nature that we jealously guard. Ours is not a simple property, but a living ecosystem where agricultural history meets the comfort of "Rural Luxury".

    The Evolution of Our Land (2006 - Today)

    What you see today is the result of years of patience, care, and respect for nature's cycles. Here are the milestones of our journey:

    2006

    The Awakening of the Olive Trees

    It all started with care. We pruned and revitalized 340 centuries-old olive trees (Leccino variety), true protected natural monuments. Alongside them, we brought new life to the land by planting 40 pomegranate trees and a mixed orchard with apricots and almonds. To ensure the estate's green future, we built a cistern for water recovery and a citrus-scented orangery.

    2007

    New Life

    To produce excellent oil, we expanded the green family. We added 1,000 new olive trees (7 years old) to the ancient patriarchs, selecting prized varieties such as Coratina, Cima di Melfi, and Cipressino. This field blend is the secret to our oil's complexity.

    2010

    The Rebirth of the Masseria

    We transformed an ancient agricultural building into a small traditional Masseria. No trulli, but the solid white architecture of Apulian farmhouses. This gave birth to two charming apartments, designed for those seeking silence and authenticity.

    2014

    Organic Certification

    A milestone of transparency. San Virgilio obtained the "ICEA Organic Certificate" (Institute for Ethical and Environmental Certification). It's the official guarantee that our Extra Virgin Oil is pure, chemical-free, and cultivated with absolute respect for the environment.

    2017

    The Farmer's House

    The restoration continued with the renovation of the ancient farmhouse, the original dwelling of the farmers who worked this land before us. Today, these walls tell stories of toil and passion, offering a welcome that feels like home.

    Today, Società Agricola San Virgilio is a refuge for "slow" travelers and a proud producer of genuine oil. We invite our guests to walk among the monumental trees, breathe the salty air, and savor the true taste of Puglia.

    The Earth's Generosity: The Organic Orchard

    San Virgilio is not just olive trees. Beyond our approximately 1,300 sacred trees, the estate nurtures a lush organic orchard, home to ancient species perfectly adapted to the sun and arid soil of Puglia.

    Walking along the characteristic dry-stone walls that trace the field boundaries, our guests find themselves immersed in a unique sensory journey. Here, the sea breeze mingles with the intense fragrances of oranges, lemons, figs, pomegranates, and majestic carob trees. A Mediterranean garden where nature, respected and cherished, generously offers its most authentic fruits.

    Located in the beautiful countryside of Fasano, we are surrounded by centuries-old olive groves and are a short distance from the most beautiful beaches of Puglia.
